herbed goat cheese
1-11 oz log of soft goat cheese
3 tablespoons of fresh Italian parsley leaves chopped fine
1 teaspoon fresh cracked black pepper
2-3 teaspoons of fine chopped fresh rosemary leaves
2-3 teaspoons of fine chopped fresh thyme leaves
¼ teaspoon kosher salt
1 ½ teaspoons of lemon zest
1 ½ to 2 tablespoons EVOO
Stir the herbs, lemon zest, salt and pepper in a medium bowl to mix. Pinch a small amount of goat cheese to make a small ball slightly bigger than a marble. Roll the balls in the mixture
completely covering them and place on platter or plate. Drizzle EVOO on and around the cheese balls then you can press onto crackers or toasted baguette slices to serve.
